School is out, it is freaking hot outside, the humidity is making my hair a frizz ball, and I have about 5 mosquito bites. This must mean that summer is here, and it is time to start firing up your grills! Grilling used to be a foreign practice for me. I never really got into it until last summer, when I realized that it is really simple. No reason to be scared of the grill, ladies (and gentlemen). You can cook anything you want on the grill and most of the time, it turns out great.

Last night, the boy and I grilled some corn on the cob we bought at our local farmer’s market this past Saturday. They were smaller, so we grilled 6 cobs with their husks on. A Hand for Haiti eBook + ATX Gluten-Free News: February 2010

Lauren from Celiac Teen (who by the way has some amazing gluten-free recipes!)  recently put together an eBook for Haiti. All proceeds will go to the Canadian Red Cross, which then goes to Haiti to help those in need. The cool thing is that the Canadian Government has agreed to match whatever is made in donations for Haiti until February 12th. Of course, you may continue to donate after February 12th.

I was honored to be a part of this eBook and thought my Balsamic- BBQ pulled pork sandwiches would be perfect for my contribution. There are many gluten-free/dairy-free recipes in this book, as well as non gluten-free recipes. Lots of great information from some of the internet’s best food blogs. Overall, there are 87 recipes from 71 people, WOW! What a great idea Lauren- thank you for being so kind and putting this together.

Balsamic BBQ-Pulled Pork Sandwiches

I’m not sure why I don’t use my slow cooker more often. It is so incredibly easy! You just gather want you want to cook, throw it in the pot and let it simmer away for hours on end. In the mean time, spreading the glorious smell of food around your house.

Before I was gluten-free I used to adore going to Jim Bob’s BBQ off 71 and Bee Cave. They had the best chopped beef BBQ sandwiches that were HUGE and full of great flavor. When Jim Bob’s closed down, I was devastated. No more wonderful chopped beef sandwiches. It’s official. I am madly in love with Udi’s. Their bread products are unreal! If only they would make cookies (hint hint). I have written about Udi’s several times. Each time I try their products, new and old, they continue to surprise me and lift my spirits. Gluten-free bread products can taste excellent! No need for gluten filled bread anymore when Udi’s provides you gluten-free bread and muffins that are moist, filling, and taste like the real deal.

A new product that I recently tried of theirs was the blueberry muffins. Udi’s blueberry muffins are gluten, dairy, soy and nut free. They come in a package of four that may be kept in the freezer and thawed out in the fridge, microwave or oven. [Read more...]
