Easy Baked BBQ Chicken (Gluten-Free, Dairy-Free)

Baked BBQ Chicken - Gluten-Free

Chris and I normally crave barbecue at least once a week. We normally just go out to a local barbecue joint for dinner, but now that we have the new oven (YAY); I can make my favorite baked BBQ chicken at home (no grill required).

This recipe is super simple to make. You’ll notice that the first 5 ingredients (plus olive oil), are more of a basic chicken seasoning recipe. Feel free to use that base, and switch out the sauce for something else (ex: Italian Dressing). Voila – you’ll have a whole new meal.

Easy Baked BBQ Chicken

Serves 2-3

Ingredients:

  • 1 lb. chicken breasts (2 breasts)
  • 1/8 teaspoon salt, each side
  • 1/4 teaspoon ground black pepper, each side
  • Onion powder
  • Garlic powder
  • 1 tablespoon Pickapeppa sauce
  • 1/2 tablespoon Worcestershire sauce
  • BBQ sauce (I used Russ and Franks)
  • Extra virgin olive oil

Directions:

Pre-heat oven to 350 degrees Fahrenheit. Place the chicken breasts in a small casserole or baking dish. Sprinkle salt and pepper on both sides of the chicken. Sprinkle onion powder and garlic powder, from the bottle, on both sides of the chicken. Pour Pickapeppa, Worcestershire over chicken. Drizzle a small amount of olive oil on the chicken. Mix chicken and ingredients with hands to evenly coat the chicken with sauces. Bake in the oven for 30-40 minutes or until chicken is cooked through. When there is 10 minutes of cook-time left, pour BBQ sauce over chicken.

I have been needing a mix-up of my morning breakfast routine. Eggs, toast and fruit or gluten-free oatmeal, can get old after a while. A smoothie is my answer, as of lately. It’s healthy, fast, fresh and fills you up!

We have been so busy lately! In between events (Whew! SXSW wore me out!), work and wedding planning; I feel like I haven’t been able to take a breather and relax 100%. Speaking of wedding planning, things are moving along nicely. I actually went wedding dress shopping recently and found “the ONE” in Austin at a cute local boutique. It feels real that it’s getting close and I’m thrilled.

Locate Special Diet will be making an appearance at a couple events around Texas soon. Make sure and check out the Texas VegFest coming up April 6, as well as the Dallas Mavericks Celiac Awareness Event brought to you by the good folks over at Gluten-Free Calendar. Blueberry-Banana Morning Smoothie

Serves 1

Ingredients:

  • 2 cups almond milk (or milk of choice)
  • 1 medium ripe banana
  • 2 tablespoons cashew butter (or nut butter of choice)
  • 2/3 cup frozen blueberries
  • 1 teaspoon ground cinnamon
  • 1 packet stevia (optional)
  • 2 tablespoons ground chia seeds

Directions:

Combine all ingredients in a blender and blend to combine. Serve chilled.

Gluten-Free Event in Austin, Texas (January 12, 2013)

Attention fellow Austinites!

Stop by this gluten-free fair tomorrow (Saturday, January 12) at Whole Foods Gateway from 12 p.m.-3 p.m.

The event is called Bootin’ the Gluten and the details are below. Locate Special Diet will be there and many other local vendors. Make sure and ask the concierge for their gluten-free grocery list; which is updated frequently and different for each Whole Foods location. They make shopping gluten-free easy!

The Bootin’ the Gluten Fair on Saturday will feature live music, product samples, store tours and more.

FREE goodie bags will be given to the first 100 customers!

From noon – 3pm, shoppers will enjoy Store-Wide Product Sampling of gluten free products in every department, and will be able to meet the vendors of their favorite gluten-free products, while enjoying live music on the patio by Vanessa Lively.

Other events include:
Noon – Bootin’ the Gluten Store Tour, Learn about products in every department, space is limited, call 512-345-5003 to RSVP

Noon-2 pm – Kids Club games & activities on the patio

Things I’m Loving, 1st Edition

I hope everyone had a wonderful holiday! I had a wonderful time with my family and fiancé in Jackson, Wyoming. We visited for yet another white Christmas and it was beautiful. Filled with laughter, snowboarding, eating, drinking and more. I can’t wait to go back (for our wedding)!

Back to my vacation…

It was lovely. I snowboarded everyday (my favorite sport), and was able to purchase my first board, boot and bindings (Hello, Burton FeelGood Flying V)!

So many great powder days! 

I came up with the idea to do a series called “Things I’m Loving” while flying home to Austin. Everyday, I come across so many interesting articles, blog posts, recipes, photographs, products, etc, that I thought would be great to share on here. Most of the time I’ll share these finds on Facebook and Twitter but thought you all might enjoy seeing these on occasion as well.

LUNA HQ Trip & a Giveaway!

 Overall, my experience visiting the LUNA headquarters was wonderful. I learned many exciting things about their company and can’t wait to follow along their journey as they continue to grow. If you haven’t had a chance to try the Clif Family Winery wines, nut mixes or olive oil, do yourself a favor and buy them! Great products, from great people.

Since my background is in nutrition, I found their in-house (Tara DelloIacono Thies) dietitian’s stance on the Power of Positive Snacking very interesting. Check out the LUNA website to learn more. Also, make sure and check out some other things that make LUNA special – like Team Luna Chix, their causes they support, and LUNAfest short films.

These last few months have been some of the more challenging months I can remember. We had a couple family members pass, whom we loved dearly. We had some events happen that were unforeseen. I launched two companies- Locate Special Diet and Careio. And the best part of it all (the non-challenging portion obviously)… I got engaged to the love of my life last week. We couldn’t be more thrilled.

Since I haven’t been in my own kitchen cooking (my oven is broke, and I’ve been too lazy to get it fixed!), I thought I would share some snapshots of what has been happening this summer; through my favorite photo-sharing app: Instagram. It’s finally here. After a year and a half of work and research, the Locate Special Diet website is live. Oh… it feels so good to type those words. Let me tell you a little bit about my baby…

Locate Special Diet helps people find local businesses that cater to a gluten-free, vegetarian, or organic lifestyle. 

The database currently includes approximately 30,000 businesses in over 27 U.S. cities. Users can browse local restaurants and grocery stores by location, dietary preference and type of food. There is also a section to filter places that offer gluten-free, vegetarian or organic drinks. Austin is currently the only city with the largest drinks database, and it includes places to get smoothies, juices or even gluten-free beer.

Don’t see your favorite local business in the database? Users can submit businesses to Locate Special Diet and after they are approved by our team, we will add them in. This includes restaurants, grocery stores and drinks for any city. Our team is also furiously working to extend the current database to reach others looking to find places that cater to their special diet lifestyle.
