Tarragon Chicken Salad
Every so often I crave the tarragon chicken salad from Whole Foods. I was bummed when they pulled it from the shelves not too long ago. I didn’t understand why, because from what everyone said it was a store favorite. But alas it is back on the shelves. In the time that it was gone; I experimented with different chicken salad recipes and finally came up with what seems to be an exact replica of the Whole Foods version. Cheeseburger Chili
Often times, things get so busy around here that we do not leave enough time to cook dinner. Or we become lazy after a long work day and pack up to head to the nearest Tex-Mex joint in Austin. This is the beauty of crock pots. You literally just throw everything in the pot, forget about it for several hours; then come home to a house that smells amazing and dinner is finished, with minimal effort. This crock pot wonder is called Cheeseburger Chili. It does not have the traditional cheeseburger ingredients, but it taste like one. I promise. Two Compound Butters: Orange-Jalapeño and Lemon-Parsley-Thyme
What’s my secret to spicing up sauces, steaks, vegetables, fish and more? Compound butter. Compound butter is a great way to add an extra layer of flavor to a dish. It’s basically a fancy term for adding herbs, zests or anything with flavor to plain old butter. They are easy to make and the possibility of ingredient combinations are endless. My favorite way to use compound butter is with proteins. I’ll saute shrimp and fish with this orange-jalapeño butter or drizzle melted lemon-parsley-thyme butter on steaks and chicken.

Today is the final day of The Gluten-Free Pizza Fest 2011. Over the course of two weeks, I have been posting gluten-free pizza recipes. I hope my choice of toppings has inspired you to get in the kitchen and whip up a delicious pizza pie. If you’ve learned one thing, pizza doesn’t have to be just cheese, tomato and pepperoni (although simple is good); the toppings for pizza are endless. Just like this unique pizza we have today: Spicy Southwest Pork Pizza with a black bean puree for the spread.

Welcome to Day 9 of The Gluten-Free Pizza Fest. In preparing for this food fest, I brainstormed some of my favorite flavors and wrote down different pizza combinations. The combination of artichoke, bacon and basil sounds a little strange but it works. Trust me. This pizza literally has three of my favorite things. Mushrooms are nutrient powerhouses. They are great sources of vitamin D and potassium, among other nutrients. I love to snack on raw mushrooms with hummus. It is one of my favorite study snacks! Mushroom pizza has been a part of pizza parlor menus for years. Now I know why. The mushrooms add a wonderful flavor to what would be a regular tomato and cheese pizza. Oh boy, do I have a special pizza recipe for you. As you know already, I live in Austin, Texas (ATX). Austin is known for it’s obsession with breakfast tacos, and they are damn good too. I decided to make my favorite breakfast taco into a pizza. Chorizo is delicious, and it adds a nice depth of flavor to this pizza. It is quick and easy to make. Enjoy it for breakfast, lunch or dinner!
