Baked Lemon-Honey Chicken (Gluten-Free)

What’s for dinner? Chicken or chicken? That is the question I always ask my brother. He is a big fan of chicken dishes, and it is a constant challenge to come up with something new. Something new that is simple enough for a college student to enjoy, no complicated flavors. It also has to be easy to make. In college, I never cooked. I depended on the vending machines, fast food and a little place called George’s Bar. That was all before I was gluten-free. Becoming gluten-free has pushed me to explore on my own in the kitchen, and I have fallen in love with the process. [Read more...]

Gluten-Free Holiday Recipe: Cranberry-Apple Sauce

I first came across this wonderful recipe on the Food Network show Big Daddy, by Aaron McCargo Junior , who won The Next Food Network Star a couple years ago. (I would love to try out for that show someday!) . I have not been impressed with his recipes thus far until I came across this beauty. I of course, felt compelled to make some changes. Next year, I would like to make my own, original cranberry sauce. I have some fabulous ideas!

This recipe calls for a large amount of sugar. I try to be sugar-free most of the time but since it is the holidays, it’s alright to indulge in your sweet tooth. Especially when a tart, sweet recipe is paired with the Perfect Roasted Turkey.

The “tweaked” recipe is below. To see the original click here. [Read more...]

Balsamic BBQ-Pulled Pork Sandwiches

Edit August 11, 2010: {Thanks for all those who voted for me in the Udi’s/Gluten-Freeville recipe contest. This recipe won 1st place!}

I’m not sure why I don’t use my slow cooker more often. It is so incredibly easy! You just gather want you want to cook, throw it in the pot and let it simmer away for hours on end. In the mean time, spreading the glorious smell of food around your house.

Before I was gluten-free I used to adore going to Jim Bob’s BBQ off 71 and Bee Cave. They had the best chopped beef BBQ sandwiches that were HUGE and full of great flavor. When Jim Bob’s closed down, I was devastated. No more wonderful chopped beef sandwiches. I decided to come up with a recipe that would be similar in taste yet be gluten-free and healthy. I have come up with this, I hope you enjoy meaty sandwiches because this one is a killer (and super easy to make! ) [Read more...]

Sour Cream Cornbread Muffins with Sun-Dried Tomatoes

I love to watch the Food Network during the holiday season. There are always many useful tips- from decorating to holiday recipes. I saw this recipe on The Food Network show: Dear Food Network; where many of their top chefs share their favorite Thanksgiving recipes that they will be serving this year. This particular one caught my eye; it sounded delicate and delicious. I bought Bob’s Red Mill Gluten-Free Cornbread mix and made a few variations. For the original recipe, click here.  The muffins came out fantastic. They are plump, moist and full of flavor.

Here is my altered version of her recipe: [Read more...]

Kale Crisps

Daily Juice, one of my favorite restaurants and juice bars in town recently started their own line of products. One of their products that I absolutely adore is their Kale Krisps (Yes, they spell crisps with a “K”). Crisp, crunchy kale with spicy nacho flavors. Even the kale-hater would devour a whole bag. Personally, I find the nacho flavors to be a tad bit overwhelming and strong. I prefer simple flavors that don’t overshadow the unique flavor of kale. The Daily Juice Kale Krisps retail at People’s Rx for $8.00; which I think is steep for kale that may be purchased at a grocery store for $1.20. [Read more...]

Lemony Kale with Baked Sweet Potato

This meal is incredibly fast and easy to make. It is full of unique, bright flavors that even the non-veggie lover will enjoy. The sausage I used was by Garrett County Farms, the chicken-apple sausage. I found this product at Sprouts and Whole Foods, both in Austin. It is gluten-free, high protein, low-fat, and they use no antibiotics. This meal can also be made vegetarian.

Cauliflower and Butternut Squash Soup with Torn Basil and Balsamic Mushrooms

Even though it is still in the 70′s outside and not officially “cold”, it still seems like soup weather. The leaves are starting to change colors and fall is officially here. Can you believe it is almost November? Time flies. Fall is one of my favorite times a year. I love everything about cooler weather. Last night, I was craving a warm, comforting soup. This recipe is so easy and delicious. It is healthy, low-fat, gluten-free, vegan, dairy-free, and best of all, easy! I hope you enjoy.
