It’s official. I am madly in love with Udi’s. Their bread products are unreal! If only they would make cookies (hint hint). I have written about Udi’s several times. Each time I try their products, new and old, they continue to surprise me and lift my spirits. Gluten-free bread products can taste excellent! No need for gluten filled bread anymore when Udi’s provides you gluten-free bread and muffins that are moist, filling, and taste like the real deal.

A new product that I recently tried of theirs was the blueberry muffins. Udi’s blueberry muffins are gluten, dairy, soy and nut free. They come in a package of four that may be kept in the freezer and thawed out in the fridge, microwave or oven. [Read more...]

Kale Crisps

Daily Juice, one of my favorite restaurants and juice bars in town recently started their own line of products. One of their products that I absolutely adore is their Kale Krisps (Yes, they spell crisps with a “K”). Crisp, crunchy kale with spicy nacho flavors. Even the kale-hater would devour a whole bag. Personally, I find the nacho flavors to be a tad bit overwhelming and strong. I prefer simple flavors that don’t overshadow the unique flavor of kale. Lemony Kale with Baked Sweet Potato

This meal is incredibly fast and easy to make. It is full of unique, bright flavors that even the non-veggie lover will enjoy. The sausage I used was by Garrett County Farms, the chicken-apple sausage. I found this product at Sprouts and Whole Foods, both in Austin. It is gluten-free, high protein, low-fat, and they use no antibiotics. This meal can also be made vegetarian.

Butternut Squash and Sweet Potato Roast

What you will need:

1 Butternut squash, cubed

1 Sweet potato, cubed

2-3 T Extra-virgin olive oil

3 T Balsamic vinegar

1 T Garlic Powder

1/2 T Onion Powder

Salt and Pepper

1 T Ground cumin

1/2 T Ground Coriander

1 Red onion, sliced in thin slices

Instructions:

Pre-heat oven to 375 degrees

Place cubed butternut squash, sweet potatoes and sliced onions in bowl.

Toss seasonings and olive oil until vegetables are coated evenly.

Place on cookie sheet and spread into an even layer

Roast for 1 hour.

Optional: Top with toasted butternut squash seeds (roast for 5 minutes, tossed in oil, salt and pepper)

Cauliflower and Butternut Squash Soup with Torn Basil and Balsamic Mushrooms

Even though it is still in the 70′s outside and not officially “cold”, it still seems like soup weather. The leaves are starting to change colors and fall is officially here. Can you believe it is almost November? Time flies. Fall is one of my favorite times a year. I love everything about cooler weather. Last night, I was craving a warm, comforting soup. This recipe is so easy and delicious. It is healthy, low-fat, gluten-free, vegan, dairy-free, and best of all, easy! I hope you enjoy.

Gluten-Free product review: Enjoy Life Lively Lemon Cookies

I have taken advantage of the Gluten-Free Jubilee at Sprouts. I have no shame. I have been there 6 times in the past week stocking up on items like xantham gum, marinades, barbeque sauces, almond flour, frozen foods…you name it. Why not? Today is unfortunately the last day of the Gluten-Free Jubilee at all Sprouts locations. I would suggest you all go stock up, ALL marked gluten-free items are 25% off.

During my last trip, I decided to pick up a box of Enjoy Life’s Soft Baked Lively Lemon Cookies.  I deny that I have a sweet tooth but obviously there is a pattern here. I buy gluten-free cookies every time I am at the grocery store and I crave them every night after dinner. My boyfriend calls me the cookie monster, a proper name indeed.

Spiced Pumpkin, Lentil and Goat Cheese Salad

I came across this fantastic recipe via Epicurious and thought I would share with my fellow food lovers. This is a great seasonal recipe and many variations are possible. You could replace the lentils with blank beans and the goat cheese for cotija cheese. Another great option would be acorn squash instead of pumpkin and use champagne vinegar in place of the red wine vinegar. The possibilities are endless! Hope you enjoy :)

 

Roasted Carrots and Onions with Honey-Balsamic Glaze

Roasting vegetables is incredibly simple. It brings out the wonderful sweet flavor of  vegetables. As long as you know the basic how-to, you may roast any vegetable you like.

Basic roasting rules:

  1. Start off by pre-heating an oven to 350 degrees
  2. Grease a cooking sheet (Since the vegetables will be going in a hot oven for an extended period of time,  make sure they are oiled up nicely or the sheet is greased so they will not stick.)
  3. Slice vegetables
  4. Toss sliced vegetables in extra-virgin olive oil
  5. Sprinkle salt, pepper and garlic powder over vegetables, mix together
  6. Spread out vegetables on sheet to a single, even layer
  7. Cook in a 350 degree oven for 45 minutes-1 hour.
