Roasted Radish Slices

“Simplicity is the ultimate sophistication.” – Leonardo da Vinci

Simplicity can be hard to achieve sometimes.  It requires a different way of thinking… in business, life, etc.

In my personal life, I sway to the term “more is more” when it comes to some things. Let’s use fashion accessories for an example (sorry boys, we’re talking jewelry). I’m a walking jewelry store normally. Actually, let me rephrase that. According to my friends, I’m the “crazy owl lady” who is always wearing multiple pieces of owl jewelry. I guess I like to express myself that way. With business and other things, I feel like I lean more towards the middle. A balance between complexity and simplicity…leaning more towards all things simple and easy. Even that sounds complex.

What does this have to do with food you may ask? Well lately, I prefer my food simple. Plain… (What? Who am I?) These days, I prefer to roast all my vegetables with only salt and oil. I actually hardly saute or steam my vegetables at all now. Roasting brings out such a beautiful flavor in vegetables, and the salt and oil just accentuates that.

In this new year I’ve made a resolution to eat other vegetables on a normal basis that I wouldn’t normally eat… like radishes.

I roasted these beauties on a cookie sheet (after slicing them thin with a mandoline) for 15 minutes at 375 degrees Fahrenheit with salt and canola oil. I hope you enjoy!

Happy 2012 everyone!

What are your New Year’s Resolutions?

Gluten-Free Food Options at ACL 2011

It’s already that time of the year… ACL 2011. The gluten-free friendly food options have grown this year. I thought we had it good last year, but this year is great! As always, please be aware of cross contamination. The food and drink companies listed below work in close quarters at the ACL Eats Food Court. Be conscious of your food choices, because there is a risk of cross contamination. Other than that, have fun and I’ll see y’all out there! Also, I should note that if you have Celiac Disease, ask your doctor for a doctor’s note. A doctor’s note stating you have Celiac Disease allows you to bring in your own food. [Read more...]

Grilled Skillet Potato-Corn Hash

Summer is officially here, according to the calendar. But, I think we have been in summer mode for a while here in Texas. It has been hot-hot-hot with little rain. Except for last night when I woke up in the middle of the night to hear loud claps of thunder. That was certainly a nice surprise! Because of the intense heat, it has been easier for me to not be tempted to go play outside, and to stay inside and work on my thesis. [Read more...]

Tuesday Treasures: Gluten-Free at Fleming’s

There are a wide variety of steak houses where you can order a modified gluten-free friendly dish, but Fleming’s is one of those steak houses that takes it to the next level and offers a large gluten-free menu. I had the chance to dine at one of the Austin Fleming’s locations recently and was pleasantly surprised at how large the gluten-free menu is, how knowledgeable the wait staff and chef were about the gluten-free lifestyle, and how eager they were to learn more about the lifestyle. Beanitos Giveaway + Chipotle Bean Dip Recipe

I’m a sucker for a crunchy snack, especially ones of chip consistency. Beanitos is a local company that makes some of the most flavorful gluten-free chips out there. I’ve been a big fan of theirs for a while now, and was pleased to hear that they now have 4 flavors, and all 4 flavors will soon come in single serve packages (this month). Flavors include: black bean, pinto bean and flax, pinto bean, cheddar and flax, [Read more...]

Grilled Lime-Paprika Broccoli

It’s officially grilling season here in Austin, Texas. Yesterday, it reached a 100 degrees in some parts of Austin. I can’t believe it is already that time of year again…super intense heat day after day, and the only way to stay cool is if you are in some sort of water. Even the shade doesn’t help. Luckily, Chris and I are going on Lake Travis this weekend for Memorial Day. Lounging on floats on the lake is one of our favorite things to do, especially surrounded by good friends we have not seen in a while. It’s going to be a [Read more...]

Apparently, I am on a seafood kick these days. Last week I posted a recipe on easy oven baked tilapia; tonight we are having spicy shrimp with wild rice (blog post to come). It’s fabulous and healthy. A nice protein alternative [Read more...]

Oven Baked Tilapia with Butter Sauce

This recipe is perfect for a busy weeknight dinner. Pre-heat your oven to 350 degrees Fahrenheit. Place white fish (I used Tilapia this time) in a small casserole dish. Drizzle extra virgin olive oil, and sprinkle salt and pepper on both sides of fish. Place fresh thyme leaves throughout. Slice a couple rounds of compound butter, place on top of fish, and bake for 12-15 minutes, or until fish is flaky. Serve over raw carrot and parsley salad.

Hello swimsuit season! We are trying to keep it somewhat light around here; especially with the amount of baking we have been doing!

Stay tuned for some great posts this month including: a new segment of ATX Gluten-Free News, a Gluten-Free Ratio Rally recipe (I joined!), and giveaways from Free From Gluten, Simply Sugar and Gluten-Free and Elana’s Pantry.
