Slow Cooker Butternut Squash Soup (Gluten-Free, Dairy-Free, Vegetarian)

Rich and creamy, this butternut squash soup recipe is a keeper.

I know, I know… another crock pot or slow cooker recipe. I can’t help it. I think I might be addicted. There’s no excuses here… you just chop it up and throw it all together in the pot. It’s that simple. It’s also nice that you can come home to a house smelling delicious, from your dinner cooking all day.

I used a kitchen scale to measure the amount of squash I had. Feel free to improvise.

Butternut Squash Soup

(Gluten-Free, Dairy-Free, Soy-Free, Vegetarian)

Equipment: I used a 5 quart slow cooker

Ingredients:

  • ~2.75 lb. of butternut squash (cubed). I used about 2 lb. and ~12.5 ounces.
  • 1 large white onion, rough chop
  • 3 cloves garlic, throw in whole
  • 1 can coconut milk, unsweetened
  • 8 cups water
  • 1 bunch leeks (approximately 3), white parts sliced
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon arrowroot
  • Optional garnish: Italian parsley

Directions:

Peel the butternut squash and scoop out the seeds (save for roasting later). Slice the butternut squash into medium size cubes. There is no need for this to be perfect, as you will blend this all in the end. Leeks are dirty so make sure and wash them! Slice the white parts of the leeks and place in a bowl of water. Swish the leeks around to remove dirt and drain the water. Rough chop the onion. In your slow cooker, place all of the above ingredients and mix to combine some. Cook on high for 4 hours. Depending on the strength of your slow cooker and size, you might have to cook longer or shorter. Stir every once in a while. Once the butternut squash is fork-tender, use an immersion blender to blend ingredients until smooth. Depending on the amount of butternut squash you use, you might need less water or more water. I prefer my soup slightly thicker, so I used more squash and less water. It’s hard to mess this one up :)

Prefer to cook this on the stove top instead? Sure, it’s possible. Use a large soup pot or dutch oven and use the same amount of ingredients. You will need less cooking time for this preparation.

Slow Cooker Tex-Mex Chicken (Gluten-Free, Dairy-Free)

Full of Flavor ~ 10 Ingredient Tex-Mex Chicken

If you are looking for a dish to throw on your Superbowl menu, look no further. This one-pot wonder is full of flavor, and it is so easy to make. There are so many different ways this dish can be served. I chose to plate mine over quinoa, but you may choose to plate over rice, buckwheat; or even on tortillas as a taco.  If you do decide to use this recipe for tacos, make sure you remove some of the liquid before placing on the tortilla.

Slow Cooker Tex-Mex Chicken (Gluten-Free, Dairy-Free)

Depending on how you serve it, this dish will serve several people.

Ingredients:

  • 1 cup chicken stock
  • 1.5 lb. chicken breasts (I used 1.58 lb., chicken thighs may be substituted).
  • 1 tablespoon tomato paste
  • 1 16 ounce jar salsa (I used Organicville tomato salsa)
  • 1/2 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon extra virgin olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 onion
  • 2 cloves garlic

Directions:

Pour the chicken stock into your slow cooker or crockpot (mine is 5 quarts). Place the chicken breasts in the slow cooker. In a food processor, add 1 onion and the garlic cloves. Pulse till the onions are finely shredded and the garlic is minced (I do this because the onion’s juices provide a great liquid. You’re welcome to just dice very finely, and mince garlic finely). Add onion-garlic mixture to the slow cooker, along with the remaining ingredients. Mix around the remaining ingredients in the slow cooker to combine and evenly spread on top of the chicken. Cook on low for 6 hours (depending on your slow cooker, times may change). Check occasionally and stir. Chicken should fall apart and shred easily once completed.

It’s finally here. After a year and a half of work and research, the Locate Special Diet website is live. Oh… it feels so good to type those words. Let me tell you a little bit about my baby…

Locate Special Diet helps people find local businesses that cater to a gluten-free, vegetarian, or organic lifestyle. 

The database currently includes approximately 30,000 businesses in over 27 U.S. cities. Users can browse local restaurants and grocery stores by location, dietary preference and type of food. There is also a section to filter places that offer gluten-free, vegetarian or organic drinks. Austin is currently the only city with the largest drinks database, and it includes places to get smoothies, juices or even gluten-free beer.

Don’t see your favorite local business in the database? Users can submit businesses to Locate Special Diet and after they are approved by our team, we will add them in. This includes restaurants, grocery stores and drinks for any city. Our team is also furiously working to extend the current database to reach others looking to find places that cater to their special diet lifestyle.

Crockpot Curried Carrot Soup

I am no way near to being a full-blown vegetarian, but that doesn’t mean I don’t enjoy eating meatless meals every now and then. Lately, Chris and I have been eating meatless at least once a week. It’s a chance for our bodies to slow down and savor the flavor of just vegetables, without big hunks of meat getting in the way. Maybe I will make the switch to vegan one day, who knows. Cheeseburger Chili

Often times, things get so busy around here that we do not leave enough time to cook dinner. Or we become lazy after a long work day and pack up to head to the nearest Tex-Mex joint in Austin. This is the beauty of crock pots. You literally just throw everything in the pot, forget about it for several hours; then come home to a house that smells amazing and dinner is finished, with minimal effort. Lentil Soup with BACON!

Bacon. I have fallen in love with bacon.

I go through these spells where I crave a certain thing all the time- one month it was sushi, one month it was soy sauce (gluten-free, of course!), another was cookies, now it is bacon. No worries, I am not pregnant. As long as I can remember, I have had these rotating cravings. Does anyone else have that? For example, I am craving eggs and ketchup at this very moment. Don’t knock it till you try it!

I am so glad to finally have my camera USB cord back! I left it in Jackson Hole and it is now back and safe in my desk drawer. I have whined about it the past few days on twitter – about my lack of cord=lack of loading pictures to my laptop.

Balsamic BBQ-Pulled Pork Sandwiches

I’m not sure why I don’t use my slow cooker more often. It is so incredibly easy! You just gather want you want to cook, throw it in the pot and let it simmer away for hours on end. In the mean time, spreading the glorious smell of food around your house.

Before I was gluten-free I used to adore going to Jim Bob’s BBQ off 71 and Bee Cave. They had the best chopped beef BBQ sandwiches that were HUGE and full of great flavor. When Jim Bob’s closed down, I was devastated. No more wonderful chopped beef sandwiches.
