Grilled Corn with Spiked Basil Butter Sauce

School is out, it is freaking hot outside, the humidity is making my hair a frizz ball, and I have about 5 mosquito bites. This must mean that summer is here, and it is time to start firing up your grills! Grilling used to be a foreign practice for me. I never really got into it until last summer, when I realized that it is really simple. No reason to be scared of the grill, ladies (and gentlemen). You can cook anything you want on the grill and most of the time, it turns out great.

Last night, the boy and I grilled some corn on the cob we bought at our local farmer’s market this past Saturday. They were smaller, so we grilled 6 cobs with their husks on. Homemade Raw Almond Butter (Naturally Gluten-Free)

This is as simple as it gets folks. I made this recipe in literally 5 minutes. All you need is a food processor, almonds (or any nut you like), oil, salt and honey. That is it. I am sure there are lots of other creative ways to make almond butter, but I will stick with the one that has worked best for me over the years. Gluten-Free Holiday Recipe: Cranberry-Apple Sauce

I first came across this wonderful recipe on the Food Network show Big Daddy, by Aaron McCargo Junior , who won The Next Food Network Star a couple years ago. (I would love to try out for that show someday!) . I have not been impressed with his recipes thus far until I came across this beauty. I of course, felt compelled to make some changes. Next year, I would like to make my own, original cranberry sauce. I have some fabulous ideas!

This recipe calls for a large amount of sugar. I try to be sugar-free most of the time but since it is the holidays, it’s alright to indulge in your sweet tooth. Especially when a tart, sweet recipe is paired with the Perfect Roasted Turkey.

Jalapeño Popper Dip

Well folks, football season is officially here. The NFL kicks off tonight on NBC at 7:30(CST) with the Tennessee Titans vs. Pittsburgh Steelers. YAY! In honor of tonight’s game I am providing a delicious recipe, courtesy of the oh-so-popular Rachael Ray; called Jalapeno Popper Dip. Before I was gluten-free, I would love to have jalapeno poppers every once in a while, a guilty pleasure of mine. They taste great with the creaminess of the cheese and spicy kick of the jalapenos. This dip can be brought over to a friends house or have some buddies over to watch the game at your place and serve this delicious dip that will become an instant hit. It is a little on the cheesy side but can be made gluten-free (by choosing the right ingredients and reading labels, and also can be made low-fat if preferred). Good luck and enjoy it :)
