Here I am talking about pancakes again. I’ve been busy testing all sorts of pancake recipes, and I have yet to get sick of them. I just love the texture and flavor of pancakes. This recipe is the exact same as the last pancake recipe, but with the addition of cocoa powder. The cocoa adds a nice touch to the batter. You can add more if you like, but I don’t like the cocoa flavor to overwhelm the simple pancake flavor. The rich cocoa really shines with the extra virgin olive oil. Pancakes have always had a special place in my heart. Growing up, I remember my parent’s house would have the sweet aroma of homemade German pancakes floating around. My Dad used to make them for us every Saturday. It was a Meyer family tradition. My brother, sister and I would sit around the kitchen table and gobble up one pancake after another. Looking for a healthy snack that satisfies your sweet tooth? Look no further than these delicate cinnamon-sugar kale chips. As you all know, kale chips have become quite popular over the past couple years. I still make them all the time. I haven’t gotten sick of them yet. I am in my last semester of graduate school right now (yay!) so I am always on the look out for something I can snack on while I study. Normally that little afternoon snack is something salty, but this time I went to the sweet side. Pizza, pizza and more pizza. That is about the only thing we have seen in Chef Jess’s (my new nickname) kitchen the past couple weeks. Quinoa Stuffed Acorn Squash with Toasted Pine Nuts
I’m sure there are a million different ways to stuff acorn squash, but quinoa is my favorite way. Quinoa is one of my favorite gluten-free grains (Well, actually quinoa is considered a relative of leafy green vegetables, like spinach). Why is this powerful grain a favorite of mine? Roasted Hazelnut Chocolate Spread
You had me at chocolate spread. That is what my boyfriend said when I told him my idea for this recipe. Holy moly, this spread is amazing. I had to stop myself from eating it all in one sitting. Roasted Cauliflower Bites wrapped in Prosciutto
You can’t mess this recipe up, I promise. It is very simple. Spread the cauliflower bites in an even layer on a cookie sheet, sprinkle with salt and pepper. Wrap cauliflower with thin slices of prosciutto, drizzle extra virgin olive oil over top, and bake at 400 for 20 minutes (depending on oven); or until prosciutto appears crisp and cauliflower is caramelized. Pancetta and bacon may also be used, instead of prosciutto. Serve with walnut-basil pesto as dipping sauce. Perfect for holiday entertaining!
