There are a wide variety of steak houses where you can order a modified gluten-free friendly dish, but Fleming’s is one of those steak houses that takes it to the next level and offers a large gluten-free menu. I had the chance to dine at one of the Austin Fleming’s locations recently and was pleasantly surprised at how large the gluten-free menu is, how knowledgeable the wait staff and chef were about the gluten-free lifestyle, and how eager they were to learn more about the lifestyle. May is Celiac Awareness Month!

Did you know that there are over 300 symptoms associated with Celiac Disease?

Did you know that Celiac Disease affects 3 million Americans, yet 95% of sufferers don’t even know they have the disease?

Since my diagnosis, I have seen a large amount of gluten-free products hitting the shelves, and an increased amount of gluten-free options in restaurants (I talked about this on the news). I’m thankful for this. Not only because it makes my life easier (and yours), but it also means there has been an increased amount of awareness.

Gluten-Free News Segment on KVUE (ABC Austin)

I was honored to film a news segment on KVUE this morning. We talked about how Austin is on the forefront of the gluten-free dining scene.

Chez Zee: a great gluten-free friendly restaurant with a gluten-free menu. They have brunch, lunch and dinner. The menu includes desserts and beer!

Ratio by Michael Ruhlman: This book has opened my eyes to a whole new world of gluten-free baking. The book describes the basic ratios for baking by weight with biscuits, muffins, cookies, pancakes and more. I would recommend purchasing a kitchen scale and this book. Begin experimenting with different gluten-free flour combinations using the basic ratios mentioned in the book. You will be surprised at all the baking possibilities and recipe creations you will come up with all on your own.

Kitchen Scale by Oxo: This is the kitchen scale I use. It is very easy to use and a great price.

We have not done one of these in a while; mainly because we made a large list of restaurants for SXSW and the gluten-free scene has been relatively quiet compared to the beginning of the year. Eddie V’s is rolling out a gluten-free menu on May 1st. Just in time for mother’s day! The arboretum location will be open for brunch. Both locations will be open for dinner on Mother’s Day.

Coconut-Lemon Sugar Cookies, Bake Sale for Japan

I used to say I would never bake. That is because I am not the type of cook that likes to measure things, and with baking, you need to measure or it does not work. You can’t just throw it in a bowl, mix, and hope for the best. It’s more complicated than that. During the gluten-free ratio rally, I began to see a new light in baking. I learned a great deal from reading along the different blog posts associated with the rally, and began to have more confidence when it came to baking. I purchased a kitchen scale and began experimenting. So far, I have been pleased with the results. This is only the beginning. Tuesday Treasures: Bard’s Beer (Gluten-Free)

Welcome to the second posting in Tuesdays Treasures!

One of the most popular questions I get from the newly diagnosed (or people just curious about the gluten-free lifestyle) is what alcoholic beverages do you drink? My answer is that there are plenty of alcoholic beverages out there that are gluten-free; you just need to know what to look for. I personally stick with vodka or wine, but sometimes it is nice to have an ice-cold beer. There are a few gluten-free beers in the US. Only 3 mainstream gluten-free beers may be found in Texas, and they are Bard’s, Redbridge and Greens.
