Recently, I talked about my love for healthier snacks. You know, something healthy that you can nibble on while you study, read, play on the computer, chat on Twitter, etc. I think I was just trying to make myself feel better, because what I really wanted to snack on was a fudge-y brownie. I am no way near to being a full-blown vegetarian, but that doesn’t mean I don’t enjoy eating meatless meals every now and then. Lately, Chris and I have been eating meatless at least once a week. It’s a chance for our bodies to slow down and savor the flavor of just vegetables, without big hunks of meat getting in the way. Maybe I will make the switch to vegan one day, who knows. I certainly feel great when I eat a healthy diet of whole foods with less meat products.

Looking for a healthy snack that satisfies your sweet tooth? Look no further than these delicate cinnamon-sugar kale chips. As you all know, kale chips have become quite popular over the past couple years. I still make them all the time. I haven’t gotten sick of them yet. I am in my last semester of graduate school right now (yay!) so I am always on the look out for something I can snack on while I study. Normally that little afternoon snack is something salty, but this time I went to the sweet side. Every so often I crave the tarragon chicken salad from Whole Foods. I was bummed when they pulled it from the shelves not too long ago. I didn’t understand why, because from what everyone said it was a store favorite. But alas it is back on the shelves. In the time that it was gone; I experimented with different chicken salad recipes and finally came up with what seems to be an exact replica of the Whole Foods version. My dear friends, this chicken salad is a winner. I would recommend doubling this batch because it will be gone before you know it; especially when you serve the chicken salad piled high on a hoagie. Today is the final day of The Gluten-Free Pizza Fest 2011. Over the course of two weeks, I have been posting gluten-free pizza recipes. I hope my choice of toppings has inspired you to get in the kitchen and whip up a delicious pizza pie. If you’ve learned one thing, pizza doesn’t have to be just cheese, tomato and pepperoni (although simple is good); the toppings for pizza are endless. Just like this unique pizza we have today: Spicy Southwest Pork Pizza with a black bean puree for the spread.
Mushrooms are nutrient powerhouses. They are great sources of vitamin D and potassium, among other nutrients. I love to snack on raw mushrooms with hummus. It is one of my favorite study snacks! Mushroom pizza has been a part of pizza parlor menus for years. Now I know why. The mushrooms add a wonderful flavor to what would be a regular tomato and cheese pizza. Oh boy, do I have a special pizza recipe for you. As you know already, I live in Austin, Texas (ATX). Austin is known for it’s obsession with breakfast tacos, and they are damn good too. I decided to make my favorite breakfast taco into a pizza. Chorizo is delicious, and it adds a nice depth of flavor to this pizza. It is quick and easy to make.
