So … I have a confession to make.
My oven has been broken since June and I still haven’t fixed it. Why you may ask? Well, partly because I’m lazy. I also have been enjoying dining out (aka eating at Lupe Tortilla like 4 times a week … love their beef fajitas)! Since our oven has been broke, we having been ‘flooding the stovetop’ as I like to call it. I’ve also been grilling up a storm. The other night we made this grilled cabbage slaw and accompanied it with grilled barbecue sausage. It was great! Even my fiance, who is not a cabbage fan, loved the slaw!
Grilled Cabbage Slaw
- 1 head purple cabbage (medium)
- 1 small-medium yellow onion
- 1 tablespoon lime juice or juice of one lime
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons honey
- 1 tablespoon white balsamic vinegar
- 1 tablespoon oil for cast iron skillet
- 1-3 tablespoons mayonnaise (depending on size of cabbage)
- Optional: lime zest
Pre-heat grill to medium-high. Place a cast iron skillet on the grill to pre-heat. On your cutting board, slice cabbage into thin strips. Slice or chop onion however you prefer. Add to bowl. Add remaining ingredients (except oil and mayo) to the cabbage and onion mixture. Mix with hands or tongs to incorporate ingredients.
Add oil to cast iron skillet and pour the cabbage mixture into the skillet. Saute for 5-10 minutes, depending on how you prefer the consistency of your cabbage. Once completed, remove cabbage mixture from skillet with a slotted spoon, into a new bowl. Add mayo and mix to incorporate. Top with lime zest and serve.
Not a fan of mayonnaise? Skip it altogether or try hummus instead (1-2 T).
