I’m a sucker for a crunchy snack, especially ones of chip consistency. Beanitos is a local company that makes some of the most flavorful gluten-free chips out there. I’ve been a big fan of theirs for a while now, and was pleased to hear that they now have 4 flavors, and all 4 flavors will soon come in single serve packages (this month). Flavors include: black bean, pinto bean and flax, pinto bean, cheddar and flax, and my personal favorite- chipotle BBQ. They are truly addicting, especially when you dip them in this spicy bean dip recipe below.
Beanitos are a healthier alternative to a salty potato chip. They are low glycemic and packed with fiber and healthy omega 3′s. Their products are gluten-free, soy-free, potato-free, cholesterol-free, corn-free and non-GMO. You won’t feel guilty about eating these crunchy chips.
Chipotle Bean Dip
Makes approximately 1 ½ cups
Equipment: large food processor
- 1 can black beans (or 1 ½ cups), drained and rinsed
- 1 small jalapeno, seeded and rough chop
- 1 four ounce can green chiles, with juice
- ½ tablespoon lime juice
- 1 tablespoon chipotle in adobo sauce
- 1 clove garlic
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 3-4 tablespoons cream cheese
Combine all ingredients in a large food processor until smooth. Refrigerate for 30 minutes. Serve cool or at room temperature.
