Pick up a bunch of fresh okra from your local farmer’s market (I purchased mine at the Barton Creek Market) and roast them to make a quick and nutritious snack or side dish. This recipe is very easy and may be made many different ways. I prefer mine with a kick, just like this spice blend below.
Spicy Roasted Okra Stalks
Ingredients:
1 large bunch okra, washed and dried
olive oil for drizzling
1 tsp apple cider vinegar
1/2 tsp garlic powder
1 tsp cumin
1/4 tsp cayenne
1/4 tsp pepper
1/2 tsp salt
Instructions:
Preheat oven to 450. Line a baking sheet with foil.
Mix dried seasonings together in a bowl. Place okra on baking sheet and drizzle with olive oil and vinegar. Sprinkle seasoning mix over okra and mix on sheet to incorporate the spices evenly.
Roast at 450 until okra crispy, about 15-20 minutes. Depending on your oven and how much okra you have, you might need to roast for a shorter/longer period of time.
