Green Mocktails (Gluten-Free)

What do you do when your greens and fruits are on their “almost” last leg? You make a mocktail- a non alcoholic cocktail. Lately, I have experimented with different blends of vegetables and fruits to come up with either a breakfast type smoothie or a refreshing greens drink. So far, my favorite has been this green mocktail. It is super easy to make and very healthy! I used all organic ingredients and some local products, including the protein powder and honey (from a company based out of Round Rock). The protein powder, almond butter and almond milk are optional. If you want a thinner version of this drink, eliminate the ingredients listed in the above sentence and just add water along with the fruits, vegetables and honey. I prefer the thicker and more filling version of this drink. We actually had just got done walking the Greenbelt and decided we needed something cool, refreshing and replenishing after our long hike.

Green Mocktails

Ingredients:

1 banana, sliced

1 cucumber, peeled and sliced

1 apple, diced

2 cups fresh spinach

1 tablespoon homemade almond butter

1 cup almond milk (or water if you want a thinner drink)

½ tablespoon honey, I used Premier Research Labs Raw Honey bought at People’s Rx Westlake.

1 tablespoon protein powder, I used Premier Research Labs Lean Body Whey bought at People’s Rx Westlake.

Tiny pinch salt

Instructions:

Place all the above ingredients in a high-powered blender or vitamix. Blend completely until uniform in color and no clumps of vegetables or fruit remain.

I served mine in champagne glasses while we sat on the porch and soaked in some of the gorgeous Texas sun!

    • Thanks! :) Yes, Guero’s offers a GF menu. If you look on my blog, on the right side under “Gluten-Free Bits”- there is a category called “ATX Gluten Free News”. Click on that category and the posts listed under that always has GF news from around town- including what restaurants have GF menus and options.
