Gluten-Free Holiday Recipe: Cranberry-Apple Sauce

I first came across this wonderful recipe on the Food Network show Big Daddy, by Aaron McCargo Junior , who won The Next Food Network Star a couple years ago. (I would love to try out for that show someday!) . I have not been impressed with his recipes thus far until I came across this beauty. I of course, felt compelled to make some changes. Next year, I would like to make my own, original cranberry sauce. I have some fabulous ideas!

This recipe calls for a large amount of sugar. I try to be sugar-free most of the time but since it is the holidays, it’s alright to indulge in your sweet tooth. Especially when a tart, sweet recipe is paired with the Perfect Roasted Turkey.

Cranberry-Apple Sauce

Ingredients:

2 cups unsweetened or no sugar added cranberry juice

1 twelve ounce bag, sweetened dried cranberries

1 teaspoon ground cinnamon

1/2 cup sugar

2 Gala apples with skin on, diced

2 teaspoons corn starch

Pinch of salt

Splash of Grand Marnier

1 teaspoon orange zest

Instructions:

In a medium saucepan over medium heat, add the cranberry juice, cranberries, cinnamon, sugar and salt. Bring to a boil and let cook for 5 minutes. Add the apples and cook, stirring occasionally, until the cranberries have softened and apples are tender, about 5 minutes.

Remove 8 ounces of the liquid to a small bowl and whisk in the cornstarch. Slowly add the cornstarch-juice mixture (slurry) to the cranberry mixture, stirring constantly. Cook for an additional 5 minutes.

Remove from heat, stir in a splash of Grand Marnier and orange zest. Cool to room temperature and refrigerate.
