I’m not sure why I don’t use my slow cooker more often. It is so incredibly easy! You just gather want you want to cook, throw it in the pot and let it simmer away for hours on end. In the mean time, spreading the glorious smell of food around your house.
Before I was gluten-free I used to adore going to Jim Bob’s BBQ off 71 and Bee Cave. They had the best chopped beef BBQ sandwiches that were HUGE and full of great flavor. When Jim Bob’s closed down, I was devastated. No more wonderful chopped beef sandwiches. I decided to come up with a recipe that would be similar in taste yet be gluten-free and healthy. I have come up with this, I hope you enjoy meaty sandwiches because this one is a killer (and super easy to make! )
Balsamic BBQ-Pulled Pork Sandwiches
Ingredients:
Crock Pot!
3 lbs. pork tenderloin, this will feed an army
1/2-1 bottle of gluten-free BBQ sauce
salt and pepper
oil
3 tablespoons garlic powder
1 softball size onion
2 tablespoons balsamic vinegar
1/2 box vegetable stock
Directions:
Heavily season the pork tenderloin on both sides with garlic powder, salt and pepper
Place in slow cooker
Coat the meat with oil, about 2 tablespoons
Top with sliced onions
Pour 1/2 a box of vegetable stock over the tenderloin, the meat should be slightly covered with liquid
Cook on low for 6 hours
Drain vegetable stock
Shred the pork tenderloin with forks, it should easily fall apart
Pour in balsamic vinegar and 1/2 bottle of BBQ sauce, you are welcome to use more.
Serve with Udi’s gluten-free bread, toasted
