I love casseroles. They are quick, easy and versatile. They may be eaten for breakfast, lunch or dinner and offer an easy clean up.
Breakfast Casserole
What you will need:
EVOO for sautéing
½ bag frozen green beans (optional)
½ lb-1 lb ground turkey sausage
1 onion, minced
1 garlic clove, minced
12 eggs, beaten together
1 can black beans, drained
1 can diced tomatoes, drained
1 tablespoon chili powder
1 tablespoon cumin
½ tablespoon coriander
Cheddar cheese for topping (optional)
Salt and pepper, to taste
Instructions:
Pre-heat oven to 350 degrees
Sauté onions and garlic in EVOO for 3 minutes or until translucent
Add in ground turkey sausage and brown
Add in ½ bag of frozen green beans and mix through meat mixture to warm up (They will defrost and cook in oven)
Add black beans, tomatoes and seasonings. Mix through.
Grease casserole dish
Place meat, vegetable mixture in casserole dish
Pour beaten eggs over mixture
Top with cheddar cheese
Cook in a 350 degree oven for 1 hour
Enjoy!

I love making big breakfast casseroles like this when we have friends or family visiting. This sounds great with the black beans and cheese!
Do they have egg substitutes not made of gluten, casein or soy…..or egg?
Breakfast casseroles are a great idea! They make quick
and easy to warm up leftovers too for when you are in a hurry.

Looks like a possibility for my church’s First Sunday pot-luck lunch, but recipe does not specify a size for the “casserole dish” – illustration looks like it may be 9 x 13 – is that correct? Also, what in the world is EVOO – I’ve never heard of such a product, and I’ve been shopping and cooking for more than a half century, and gluten-free for less than 10 years.
