Protein pancakes with coconut and blueberries

 


Gluten-free recipe: protein packed pancakes with blueberry and coconut

What you will need:

1 C Pamela’s baking and pancake mix
1 egg
¾ C-1 C almond milk
1 tablespoon macadamia nut oil
½ scoop-1 scoop vanilla protein powder
1 tablespoon CocoChia powder (a blend of organic coconut and chia seeds)
½ C frozen blueberries

-Preheat pan.
-Blend all ingredients in a large bowl and mix together.
-Coat the pan with cooking spray or a very small amount of macadamia nut oil before you place pancakes in pan.
-Cook until golden brown.

Since they have the coconut and vanilla protein powder, they are naturally sweet so syrup is optional.

Other optional toppings include: fresh fruit, butter and raw sugar, almond butter for more protein or just eat plain.

** Also with most recipes, if you are not gluten-free you will still enjoy these :)
